Butterfly Coconut Sago

Winter weather got you feeling blue? Well try whipping up a batch of this mood lifting butterfly pea flower infused sago that is guaranteed to satisfy your sweet-tooth and get you smiling from ear to ear. Plus, it is absolutely gorgeous and so delicious!

 

 Ingredients: Butterfly Coconut Sago              

 1 ½ Tsp. Dried Butterfly Pea Flowers                              

 2 Cups Boiling Water  

 1/3 Cup Sago (Tapioca Pearls)           

 1 Cup Coconut Milk (For the Sago) ¾ Cup Coconut Milk (For the Coconut Pudding)       

 ¼ Cup Maple Syrup (For the Sago) 3 Tbsp. Maple Syrup (For the Coconut Pudding)      

 ¼ Tsp. Butterfly Pea Powder

 ¼ Tsp. Salt        

 ½ Tsp. Agar Agar Powder       

 ½ Tsp. Smartfruit Blooming Berry

 

 Preparation:

  1. Start by combining the butterfly pea flowers with the boiling water, let steep for 10 minutes until the water turns dark blue; drain well and let cool
  2. Soak sago in the flower mixture for 1 hour
  3. Next make the coconut pudding; in a saucepan bring coconut milk to a boil, stir in butterfly pea powder and agar agar powder until dissolved
  4. Lower the heat add in maple syrup, Smartfruit, and salt
  5. Simmer for 1 minute, turn off the heat, and allow mixture to cool
  6. Pour into your favorite jars and place in the refrigerator
  7. In a large pot, bring 2 cups of water to a boil and add in the flower and sago mixture; cook until soft and translucent
  8. Drain and rinse
  9. Add sago to a bowl and combine with coconut milk and maple syrup and mix well
  10. Grab jars from the refrigerator and top with sago mixture
  11. Enjoy!
