Super Strawberry Ice Cream Bar

It is never the wrong time for ice cream and while most are filled with sugars and artificial add-ins these delectable delights are satisfyingly sweet without any of the guilt. Made using vegan and all-natural ingredients, these ice cream bars are a superb 3rd course to every delicious dish. Not only will these frozen treats appease anyone’s sweet tooth, but they are boosted with a natural fruit antioxidant powerhouse blend that will help your body operate at peak performance.  Ingredients: Super Strawberry Ice Cream Bar                

 1 Cup Cashews (Soaked overnight)                               

 ½ Cup Chilled Coconut Cream   

 2 ½ Cups Strawberries            

 5 Tbsp. Maple Syrup       

 1 Tsp. Agar-Agar Powder  

 1 Tsp. Smartfruit Summer Strawberry

 

 Preparation:

  1. In a small pot, combine agar powder and coconut cream and simmer on low-medium heat for about 10 minutes or until the powder dissolves
  2. Stir frequently
  3. Add cashews, strawberries, maple syrup, and Smartfruit to a blender and gently pulse
  4. Once combined add in the coconut mixture and blend again until smooth
  5. Pour into chilled molds and freeze for 3-4 hours
  6. Defrost slightly before serving
  7. Yum!
