Vegan Blooming Berry English Muffins Made with Smoothie Mix

 Vegan Blooming Berry English Muffins Made with Smoothie Mix Ingredients:

  • 1 ¼ tsp of Yeast
  • ½ cup Warm Water
  • ½ cup Warm Almond Milk
  • 3 tsp Brown Sugar
  • 2 tbsp Vegetable Shortening
  • 3 cups All-Purpose Flour plus a little for dusting
  • ½ tsp Salt
  • Fresh Blueberries

 Vegan Blooming Berry English Muffins Made with Smoothie Mix Preparation:

  1. In a medium mixing bowl, add water, then sprinkle in yeast, and let stand for 5 minutes or until bubbly
  2. Add almond milk, brown sugar, and shortening. Mix well
  3. Fold in flour and salt
  4. Knead dough for 8 minutes then place in a well-oiled bowl
  5. Let the dough rise for at least one hour *dough should double in size*
  6. On a floured surface roll dough out to half an inch
  7. Using a round biscuit or cookie cutter, cut out circles until no dough remains
  8. Let cut dough rise for half an hour
  9. Heat a lightly greased pan or griddle to medium-high heat
  10. Place muffins on the pan or griddle and cook each side for about 5 minutes
  11. Let muffins cool then split them with a fork *Muffins can be stored in the freezer. To use just toast*
  12. Top your English muffins with fresh blueberries
  13. Finish with a drizzle of Smartfruit Blooming Berry smoothie mix
